Our distinct smoked salmon process begins with the freshest salmon available. After a special dry curing process is completed, sides of salmon are cold smoked with a unique blend of hardwoods. The salmon are trimmed by hand, packed, chilled, and delivered to their markets within hours of leaving the smokehouse.
