Keep refrigerated. Remove lamb from packaging. Grilling: Place on grill over Medium, ash-covered coals. Grill, uncovered, turning occasionally. Broiling: Broil on rack of broiler pan so surface of lamb is about 4 inches from heat. Remove leg steaks from packaging, season or marinate leg steak to taste, grill broil, or pan-fry. Skillet: Heat a small amount of oil in skillet over Medium-High heat until hot. Place lamb in skillet uncovered, turning once. Medium Rare to Medium is the desired degree of doneness for lamb-coked to an internal temperature of 130-135 degrees F for medium rare and 140-145 for medium.
