Directions Creole Gumbo: Ingredients: 1 Just In Time Gourmet Creole Gumbo; 2 tablespoons vegetable oil; 1 pound chicken breasts cut into 1-inch cubes; 1 pound smoked sausage, cut into 1/2-inch slices; 4 cups water; 1 (15-ounce) can diced tomatoes, undrained; 1 (8-ounce) bag frozen cut okra. In a 4-quart pot or Dutch oven add oil, chicken and sausage; cut on medium heat for 5-7 minutes or until juices run clear. Stir in gumbo mix and water. Bring to a slow boil; reduce heat and continue cooking for 5-10 minutes, stirring occasionally. Add diced tomatoes and okra; continue cooking for 5-10 minutes until heated through. Do not overcook okra or it will become gummy. Serves 12. Serve over rice with a dash of hot pepper sauce.
