Directions Muffins You will need: 2 eggs, 1/4 cup oil or melted butter 1 cup water (or fruit juice). Heat oven to 400 degrees F. Lightly grease muffin pan (or use paper cups). Combine 2 eggs, 14 cup oil and 1 cup water. Add mix and blend well. Bake 12-15 minutes or until tops turn a light golden brown. Makes about 12 muffins. Scone directions: Preheat oven to 400 degrees F. Lightly grease cookie sheet. Cut 8 tablespoons cold butter into dry mix using pastry blender or forks until somewhat crumbly. Add 2 beaten eggs and 1/3 cup milk and stir until just combined. Shape into 8 disks, wetting fingers if needed. Sprinkle with sugar if desired. Bake for 12-15 minutes or until golden brown. For either: Try adding: dried cherries, dried or fresh cranberries, blueberries, chocolate chips, nuts, poppyseeds, lemon or orange zest.
