Calling all Cardinals Fans! Celebrate Gameday with Budda Baker's favorite loaded nachos.
Ingredients
FOR THE NACHOS
- 1-2 bags of Tortilla Chips
- 1/2 jalapeno, very thinly sliced pico de gallo
- Sour Cream
- Cilantro
- 1 can of black beans
- 1-2 cups Shredded Cheese (mexican blend is best)
- 1 pack of ground beef
FOR THE QUICK GUACAMOLE
- 2 ripe avocado
- 1/8 tsp. cumin
- Salt and Pepper, to taste
- Juice of 1 lime
- 1 clove garlic, minced
- Freshly chopped cilantro (about 1 tbsp.)
Instructions
- Preheat oven to 350 degrees.
- Heat a skillet over medium-high heat. Add olive oil and ground beef and brown the meat, breaking it up with the back of a spoon, until cooked through (no longer pink), about 8 minutes.
- Meanwhile, in a bowl combine all of the quick guac ingredients. mash until it reaches your desired consistency.
- Spread all of the chips across a large baking sheet. Pour the beans and meat over top. Top with cheese and bake in the preheated oven until cheese has just melted, about 5 minutes.
- Remove from oven and top with the guac, the sour cream jalapeno, pico, and cilantro.
- Serve to a hungry group Cardinals fans. Enjoy!
