Instructions

• STEP 1

  Wash and dry the fresh produce.

  • ½ avocado
  • ½ tomato

• STEP 2

  Thinly slice tomato into half rounds; set aside.

• STEP 3

  Halve and pit the avocado; slice crosswise while still in the skin and scoop out with a spoon. Set aside.

• STEP 4

  Preheat a skillet over medium-high heat.

• STEP 5

  Pat the steak dry with paper towels and place on a plate; season with salt and pepper on both sides.

  • ½ lb striploin (New York strip) steak
  • ¼ tsp salt
  • ¼ tsp black pepper

• STEP 6

  Once the skillet is hot, add oil and swirl to coat the bottom. Add steak and cook until desired doneness, 2-5 minutes per side. Transfer to a plate and loosely cover with foil.

  • ½ tsp extra virgin olive oil

• STEP 7

  Return skillet to medium-high, add more oil and swirl to coat the bottom.

  • ½ tsp extra virgin olive oil

• STEP 8

  Gently crack eggs into the skillet and season with salt and pepper. Cook until the tops of the whites are set but the yolks are still runny, 3-4 minutes.

  • 2 eggs
  • 1 pinch salt
  • 1 pinch black pepper

• STEP 9

  Meanwhile, toast bread and slice in half on the diagonal.

  • 2 slices whole grain bread

• STEP 10

  Thinly slice steak against the grain.

• STEP 11

  To serve, divide steak, eggs, and toast between plates. Garnish with tomato and avocado. Enjoy!
